Avocado BLT



1 extra ripe avocado

2 tablespoons lemon juice

1/2 teaspoon salt

1/8 teaspoon cayenne pepper

Mayonnaise spread to taste


8 slices bacon

Bread of your choice 
(I usually take a trip to the bakery aisle for whatever specialty loaves strike my fancy)

Romaine lettuce

2 medium tomatoes, cut into slices

Red onion slices, if ye so desire

Freshly cracked black pepper

1.     Combine spread ingredients in small bowl.  Mash until smooth and set aside.

2.     Prepare bacon as directed on package, crack black pepper generously over each side of bacon as it sizzles; drain thoroughly on paper towels.

3.     Toast bread slices; spread bottom slice thinly with mayonnaise and layer bacon slices. On top slice, spread a generous amount of avocado mixture and layer with lettuce and tomato. Bring halves together, cut into half at a diagonal. Serve immediately.
