Warm Brie + Ginger-Citrus Glaze

WARM BRIE + GINGER-CITRUS GLAZE

 1 (8-oz) Brie round

1/4 c. ginger preserves (feel free to substitute a fig preserve for a sweeter flavor

1 tbs honey

2 tsp apple cider vinegar

1 1/2 tsp orange zest
(I use dried valencia orange peel from the spice section of the store, or you could go fresh if you have a zester and a desire to eat the leftover orange)

1/2 tsp chopped fresh rosemary
(tastes better with fresh, but dried works the same -- just double the amount.  However, it's best to just get into the habit of using fresh whenever possible for any ingredient.  Your taste buds will thank you and everyone will think you're a much better cook than you actually may be.)

1/4 tsp salt

1/4 tsp freshly ground pepper

Assorted crackers or fresh fruit

1.    Preheat oven to 400°. Trim and discard rind from top of Brie. Place Brie on a lightly greased baking sheet. Bake 7 to 9 minutes or until cheese is just melted.

2.    Meanwhile, microwave preserves and next 6 ingredients in a small microwave-safe glass bowl at HIGH 30 seconds; stir until blended and smooth. Microwave at HIGH 1 minute. Let stand while cheese bakes.

3.     Transfer Brie to a serving dish; drizzle warm glaze immediately over Brie. Serve with assorted crackers and fresh fruit.

Party Tip: Place the Brie directly on an oven-safe serving plate, and bake as directed. The hot plate will keep the cheese warm and gooey longer.
